Ingredients
  

Stuffed Peppers
  • 4 pieces bell peppers any color
  • 1 cup cooked rice white or brown
  • 1 pound ground chicken
  • 2 tablespoons soy sauce low sodium recommended
  • 1 tablespoon hoisin sauce
  • 1 teaspoon ginger freshly grated
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 1 cup green onions chopped
  • 1 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet over medium heat, add ground chicken and cook until browned.
  4. Add garlic, ginger, soy sauce, hoisin sauce, and sesame oil to the skillet. Stir to combine.
  5. Mix in the cooked rice and green onions, and season with black pepper.
  6. Stuff each bell pepper with the chicken mixture and place them upright in a baking dish.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 5 minutes to brown the tops.
  9. Let cool slightly before serving.
