Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Vegetables
  • 1 cup asparagus trimmed and cut into 1-inch pieces
  • 1 cup peas fresh or frozen
Sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 lemon zest and juice
  • 1/4 cup parmesan cheese grated
  • Salt to taste
  • Pepper to taste

Method
 

Cook the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
Prepare the Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add asparagus pieces and cook for 3-4 minutes until tender. Stir in the peas and cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked gnocchi to the skillet with the vegetables. Pour in the lemon juice and zest, and sprinkle with parmesan cheese. Toss gently to combine. Season with salt and pepper to taste.
  2. Serve immediately, garnished with additional parmesan if desired.

For a vegan version, omit the parmesan cheese or use a plant-based alternative.
