Avocado Fries
  • 2 medium ripe avocados peeled, pitted, and sliced into wedges
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 large egg beaten
  • 1 tablespoon olive oil for drizzling

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine panko breadcrumbs, garlic powder, paprika, and salt.
  3. Dip each avocado wedge into the beaten egg, then coat with the breadcrumb mixture.
  4. Place the coated avocado fries on the prepared baking sheet.
  5. Drizzle olive oil over the fries for added crispiness.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  2. Remove from the oven and let cool slightly before serving.
