Prepare the Salmon Bites
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the panko breadcrumbs, salt, and black pepper.
- Dip each salmon piece in the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated salmon bites on a baking sheet lined with parchment paper.
Cook the Salmon Bites
- Drizzle olive oil over the salmon bites.
- Bake in the preheated oven for 10-12 minutes, or until golden brown and cooked through.
Make the Bang Bang Sauce
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Serve
- Remove salmon bites from the oven and let cool slightly.
- Serve with Bang Bang sauce for dipping.
