Ingredients
  

Salmon Bites
  • 1 pound salmon fillet cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1 tablespoon olive oil for frying
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon lime juice

Method
 

Prepare the Salmon Bites
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the panko breadcrumbs, salt, and black pepper.
  3. Dip each salmon piece in the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated salmon bites on a baking sheet lined with parchment paper.
Cook the Salmon Bites
  1. Drizzle olive oil over the salmon bites.
  2. Bake in the preheated oven for 10-12 minutes, or until golden brown and cooked through.
Make the Bang Bang Sauce
  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Serve
  1. Remove salmon bites from the oven and let cool slightly.
  2. Serve with Bang Bang sauce for dipping.

Notes

For extra crunch, you can pan-fry the salmon bites instead of baking them.
