Ingredients
  

For the Salad
  • 2 cups grilled chicken breast, sliced BBQ seasoned
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup corn, cooked fresh or canned
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped for garnish
For the Creamy Avocado Dressing
  • 1 ripe avocado
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 cup water to thin the dressing
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with BBQ sauce and grill for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest before slicing.
Make the Dressing
  1. In a blender, combine the avocado, Greek yogurt, lime juice, garlic, water, salt, and pepper. Blend until smooth and creamy. Adjust the consistency with more water if needed.
Assemble the Salad
  1. In a large mixing bowl, combine the salad greens, cherry tomatoes, cucumber, corn, and red onion. Add the sliced grilled chicken on top.
  2. Drizzle the creamy avocado dressing over the salad and toss gently to combine. Garnish with diced avocado and chopped cilantro.
