Ingredients
  

Cake
  • 1 cup cake flour sifted
  • 1 cup granulated sugar divided
  • 12 large egg whites at room temperature
  • 1/4 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 cup key lime juice freshly squeezed
  • 1 tablespoon key lime zest
Topping
  • 1 cup whipped cream for serving
  • 1 tablespoon key lime zest for garnish

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sifted cake flour and 1/2 cup of granulated sugar.
  3. In a separate bowl, beat the egg whites, salt, and cream of tartar until soft peaks form.
  4. Gradually add the remaining sugar, continuing to beat until stiff peaks form.
  5. Gently fold in the flour mixture, vanilla extract, key lime juice, and zest until just combined.
  6. Pour the batter into an ungreased 9-inch tube pan.
  7. Bake for 30-35 minutes or until the cake springs back when lightly touched.
  8. Remove from the oven and invert the pan to cool completely.
Serve
  1. Once cooled, carefully remove the cake from the pan.
  2. Serve slices topped with whipped cream and garnish with key lime zest.
