Prepare the Cake
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the sifted cake flour and 1/2 cup of granulated sugar.
- In a separate bowl, beat the egg whites, salt, and cream of tartar until soft peaks form.
- Gradually add the remaining sugar, continuing to beat until stiff peaks form.
- Gently fold in the flour mixture, vanilla extract, key lime juice, and zest until just combined.
- Pour the batter into an ungreased 9-inch tube pan.
- Bake for 30-35 minutes or until the cake springs back when lightly touched.
- Remove from the oven and invert the pan to cool completely.
Serve
- Once cooled, carefully remove the cake from the pan.
- Serve slices topped with whipped cream and garnish with key lime zest.
