Ingredients
  

Cookie Cake Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or colorful sprinkles
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • food coloring optional for decoration

Method
 

Prepare the Cookie Cake
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips or sprinkles.
  7. Spread the cookie dough evenly onto the prepared baking sheet.
  8. Bake for 20-25 minutes or until the edges are golden brown and the center is set.
  9. Allow to cool completely on a cooling rack.
Make the Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, mixing on low speed until combined.
  3. Add the heavy cream and vanilla extract, then beat on high speed until light and fluffy.
  4. If desired, add food coloring to achieve the desired color.
Assemble the Cake
  1. Once the cookie base is completely cool, spread the frosting evenly over the top.
  2. Decorate with additional sprinkles or chocolate chips if desired.
  3. Slice and serve to celebrate!
