Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
Filling
  • 1 jar morello cherries drained
  • 1 cup heavy cream whipped
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
Topping
  • 1 cup heavy cream whipped
  • 2 tbsp chocolate shavings
  • 1 cup morello cherries for decoration

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Assembly
  1. Once the cakes are cool, slice each cake in half horizontally to create four layers.
  2. In a bowl, mix the whipped cream with powdered sugar and vanilla extract.
  3. Place one layer of cake on a serving plate. Spread a layer of whipped cream and top with cherries.
  4. Repeat the layers with the remaining cake and filling.
  5. Frost the top and sides of the cake with remaining whipped cream.
  6. Decorate with chocolate shavings and whole cherries on top.

Notes

For best results, chill the whipped cream before using.
