Cake Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- Stir in boiling water until well combined. The batter will be thin.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Assembly
- Once the cakes are cool, slice each cake in half horizontally to create four layers.
- In a bowl, mix the whipped cream with powdered sugar and vanilla extract.
- Place one layer of cake on a serving plate. Spread a layer of whipped cream and top with cherries.
- Repeat the layers with the remaining cake and filling.
- Frost the top and sides of the cake with remaining whipped cream.
- Decorate with chocolate shavings and whole cherries on top.
