Ingredients
  

Salad Base
  • 4 cups Mixed Greens Spinach, arugula, and romaine
  • 1 cup Blackberries Fresh
  • 2 medium Kiwis Peeled and sliced
  • 1 cup Cherry Tomatoes Halved
  • 1/2 cup Feta Cheese Crumbled
Chicken
  • 2 large Chicken Breasts Grilled and sliced
Dressing
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 1 teaspoon Honey
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic Minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.
Make the Dressing
  1. In a mixing bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, blackberries, kiwis, cherry tomatoes, and feta cheese.
  2. Slice the grilled chicken and place it on top of the salad.
  3. Drizzle the balsamic dressing over the salad and toss gently to combine.
Serve
  1. Divide the salad among plates and serve immediately.
