Ingredients
  

Pie Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water
Filling
  • 2 cups fresh blueberries or frozen
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 cup oats rolled

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Stir in ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Roll out the dough on a floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges.
Prepare the Filling
  1. In a bowl, combine blueberries, sugar, cornstarch, lemon juice, and cinnamon. Toss to coat the blueberries evenly.
Prepare the Crumble Topping
  1. In a bowl, mix flour, brown sugar, oats, and melted butter until crumbly.
Assemble and Bake
  1. Preheat the oven to 375°F (190°C). Pour the blueberry mixture into the prepared pie crust and sprinkle the crumble topping evenly over the filling.
  2. Bake for 40-45 minutes or until the filling is bubbly and the topping is golden brown. Let cool before serving.
