Ingredients
  

Chicken Marinade
  • 1 pound chicken breast cut into cubes
  • 1/2 cup pesto sauce store-bought or homemade
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Skewers
  • 1 cup cherry tomatoes halved
  • 8 ounces fresh mozzarella balls bocconcini
  • 1 tablespoon balsamic glaze for drizzling
  • 1 tablespoon fresh basil for garnish

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the chicken cubes, pesto sauce, olive oil, salt, and black pepper. Mix well to coat the chicken evenly.
  2. Cover and marinate in the refrigerator for at least 30 minutes.
Assemble the Skewers
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken, cherry tomatoes, and mozzarella balls onto the skewers, alternating between each ingredient.
Grill the Skewers
  1. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  2. Remove from the grill and drizzle with balsamic glaze. Garnish with fresh basil before serving.

Notes
