Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 1 cup mayonnaise adjust to taste
  • 1 cup celery diced
  • 1/2 cup red grapes halved
  • 1/4 cup almonds sliced or chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Sandwich Assembly
  • 4 pieces croissants halved
  • 4 leaves romaine lettuce optional

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, almonds, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.
Assemble Sandwiches
  1. Take each croissant half and place a leaf of romaine lettuce on the bottom half (if using). Spoon a generous amount of chicken salad on top of the lettuce, then place the other half of the croissant on top to close the sandwich.
Serve
