Ingredients
  

Chicken Salad Base
  • 2 cups cooked chicken breast, shredded Use rotisserie chicken for convenience.
  • 1 cup Greek yogurt Plain, unsweetened.
  • 1 cup celery, diced For crunch.
  • 1/2 cup red grapes, halved Optional for sweetness.
  • 1/4 cup red onion, finely chopped For flavor.
  • 1 tablespoon lemon juice Freshly squeezed.
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper To taste.
  • 1/4 cup fresh parsley, chopped For garnish.

Method
 

Prepare the Ingredients
  1. Shred the cooked chicken breast and place it in a mixing bowl.
  2. Dice the celery, halve the grapes, and finely chop the red onion.
Mix the Salad
  1. Add the diced celery, halved grapes, and chopped red onion to the bowl with chicken.
  2. In a separate bowl, whisk together Greek yogurt, lemon juice, dijon mustard, salt, and pepper.
  3. Pour the yogurt mixture over the chicken and vegetables, and mix until well combined.
Serve
  1. Garnish with chopped parsley and serve immediately, or refrigerate for later.
