Ingredients
  

  • 12 oz Penne pasta
  • 1 lb Chicken sausage (sliced)
  • 1 cup Bell peppers (sliced)
  • 1 cup Zucchini (sliced)
  • 1 cup Cherry tomatoes (halved)
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1/4 cup Parmesan cheese (grated)

Method
 

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced chicken sausage and cook until browned.
  4. Stir in minced garlic and cook for 1 minute.
  5. Add sliced bell peppers, zucchini, and halved cherry tomatoes; cook until the vegetables are tender.
  6. Pour in chicken broth and add Italian seasoning, salt, and black pepper; bring to a simmer.
  7. Combine the cooked pasta and the sausage mixture; stir well to coat.
  8. Serve topped with grated Parmesan cheese.
