Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
Cherry Filling
  • 1 cup cherry pie filling
Chocolate Ganache
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate chopped

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, buttermilk, oil, and vanilla to the dry ingredients and mix until smooth.
  4. Stir in boiling water until well combined. Pour the batter into the prepared cake pan.
  5. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool.
Prepare the Ganache
  1. In a saucepan, heat the heavy cream until it begins to simmer.
  2. Remove from heat and add the chopped chocolate. Stir until smooth and glossy.
Assemble the Cake
  1. Once the cake has cooled, slice it in half horizontally.
  2. Spread the cherry filling on the bottom layer, then place the top layer back on.
  3. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  4. Let the ganache set before slicing and serving.
