Method
Grill the Corn
- Preheat the grill to medium-high heat. Place the husked corn directly on the grill grates.
- Grill the corn for about 10-15 minutes, turning occasionally, until charred and cooked through.
Prepare the Sauce
- In a bowl, combine mayonnaise, sour cream, lime juice, garlic powder, and salt. Mix until smooth.
Assemble the Elote
- Remove the corn from the grill and brush generously with the sauce mixture.
- Sprinkle with crumbled cotija cheese, chili powder, and chopped cilantro.
- Serve with lime wedges on the side.
