Ingredients
  

  • 10-12 slices toast bread
  • 1/2 stick butter, softened
  • 1/4 cup light brown sugar
  • 3 tsp cinnamon
  • 2 large eggs
  • 3 tbsp milk
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon or up to taste
  • powdered sugar, optional
  • 2 tbsp butter for cooking more if necessary

Method
 

  1. Roll each slice of toast bread flat with a rolling pin.
  2. In a bowl, mix the softened butter, light brown sugar, and 3 teaspoons of cinnamon.
  3. Spread the mixture evenly over each slice of flattened toast.
  4. Roll the slices up tightly and set aside.
  5. In another bowl, whisk together the eggs, milk, 2 tablespoons of granulated sugar, and 1 teaspoon of cinnamon.
  6. Heat the additional butter in a skillet over medium heat.
  7. Dip each roll-up into the egg mixture, coating well.
  8. Place the coated roll-ups in the skillet and cook until golden brown on all sides.
  9. Serve warm, dusted with powdered sugar if desired.
