  • 2 cups fresh corn kernels can use canned or frozen if fresh is not available
  • 1 large ripe avocado diced
  • 1/2 cup chopped fresh cilantro
  • 1 medium red onion finely chopped
  • 1 medium lime juiced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Preparation
  1. In a large mixing bowl, combine the corn kernels, diced avocado, chopped cilantro, and finely chopped red onion.
  2. Drizzle the lime juice over the salad and season with salt and black pepper.
  3. Gently toss all the ingredients together until well mixed.
  4. Serve immediately or refrigerate for up to 30 minutes before serving.
