Ingredients
  

Vegetables
  • 2 cups fresh corn kernels can use frozen if fresh is unavailable
  • 2 cups okra, sliced
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
Spices
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquids
  • 1 cup vegetable broth
  • 2 tablespoons olive oil

Method
 

Cooking the Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, sauté until softened, about 5 minutes.
  2. Add garlic and cook for an additional minute until fragrant.
  3. Stir in the okra and cook for about 5 minutes, stirring occasionally.
  4. Add corn, diced tomatoes, vegetable broth, and all spices. Stir well to combine.
Simmering
  1. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally.
  2. Taste and adjust seasoning if necessary before serving.
