- Wash and sort the fresh cranberries.
- In a saucepan, combine cranberries, water, lemon juice, and salt. Bring to a boil over medium heat, stirring occasionally.
- Once boiling, reduce heat and let simmer for about 10 minutes.
- Mash the cranberries to extract juice.
- Strain the mixture through a fine mesh sieve to remove solids.
- Return the juice to the saucepan. Add sugar and pectin, stirring well.
- Bring the mixture to a boil again, and cook for another 10 to 15 minutes until the mixture thickens.
- Pour the candy mixture into molds or a lined tray and let cool completely.
- Once set, remove from molds and cut into desired shapes.
