Ingredients
  

Chicken Cutlets
  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thickness
Breading Mixture
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Cooking
  • 1/4 cup olive oil for frying

Method
 

Prepare the Chicken
  1. Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet.
Set Up Breading Station
  1. In a shallow dish, place the flour. In another dish, beat the eggs. In a third dish, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Bread the Chicken
  1. Dredge each chicken cutlet in flour, shaking off excess, then dip in beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
Cook the Cutlets
  1. Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken cutlets and cook for 4-5 minutes on each side until golden brown and cooked through.
Serve
  1. Remove from skillet and drain on paper towels. Serve hot, garnished with additional Parmesan cheese if desired.
