Ingredients
  

Salad Base
  • 2 cups cooked chicken, shredded Use rotisserie or boiled chicken
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup almonds, sliced Optional for crunch
Curry Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt For creaminess
  • 1 tablespoon curry powder Adjust to taste
  • 1 tablespoon honey For sweetness
  • 1 tablespoon lemon juice Freshly squeezed
  • 1/2 teaspoon salt To taste
  • 1/4 teaspoon black pepper To taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, celery, grapes, red onion, and almonds.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, Greek yogurt, curry powder, honey, lemon juice, salt, and pepper until smooth.
Combine
  1. Pour the curry dressing over the salad mixture and toss until everything is well coated.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
