Ingredients
  

  • 6 large one-day-old croissants
  • 1 tablespoon diced almonds per croissant
  • powdered sugar for dusting
  • 3/4 cup water
  • 3 tablespoons rum
  • 2 tablespoons granulated sugar
  • 1 cup almond flour or almond meal
  • 1/2 cup granulated sugar
  • 1 stick salted butter softened (8 tbsp)
  • 1 large egg
  • 1 teaspoon almond extract

Method
 

  1. Preheat the oven.
  2. Cut open the croissants and fill them with almond filling made from almond flour, sugar, butter, egg, and almond extract.
  3. Blend water, rum, and granulated sugar, then soak the croissants briefly in the mixture.
  4. Place the croissants on a baking sheet.
  5. Bake until golden brown and heated through.
  6. Dust with powdered sugar before serving.
