Ingredients
  

  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • a pinch sea salt
  • 3 very ripe bananas, mashed
  • 1/4 cup maple syrup
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, baking powder, baking soda, cinnamon, and sea salt.
  3. In another bowl, combine the mashed bananas, maple syrup, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  5. If using, fold in the chocolate chips.
  6. Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
  7. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from the muffin tin.
