Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts sliced into strips
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1/2 teaspoon salt
For the Bowls
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 cup baby spinach
  • 1 medium red onion sliced
  • 1/2 cup feta cheese crumbled

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add chicken strips and toss to coat.
  2. Preheat the grill or grill pan over medium-high heat. Grill chicken for 5-7 minutes on each side or until fully cooked.
Make the Tzatziki Sauce
  1. In another bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt until well combined.
Assemble the Bowls
  1. In each bowl, layer cooked quinoa or rice, grilled chicken, cherry tomatoes, spinach, red onion, and feta cheese.
  2. Drizzle tzatziki sauce over the top and serve immediately.
