  • 8 oz mushrooms (sliced)
  • 1 clove garlic (minced)
  • 1/8 tsp salt
  • 1/4 tsp pepper
Dairy and Eggs
  • 2 oz feta cheese (crumbled)
  • 4 large eggs
  • 1/4 cup grated Parmesan
  • 1 cup milk
  • 1/2 cup shredded mozzarella
Cooking Oil
  • 1 Tbsp cooking oil (divided)

Method
 

Cooking Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a pan, heat 1/2 tablespoon of cooking oil over medium heat. Sauté mushrooms and garlic until softened.
  3. In a mixing bowl, combine spinach, cooked mushrooms, feta cheese, eggs, milk, salt, pepper, and Parmesan. Mix well.
  4. Grease a pie dish with the remaining cooking oil and pour the mixture into it.
  5. Top with shredded mozzarella.
  6. Bake for 50 minutes or until the center is set and the top is golden.
