  • 1/2 teaspoon Almond Extract
Filling
  • 6 croissants day-old
  • 1/2 cup Salted Butter softened
  • 1/2 cup Sugar
  • 1 1/4 cups Almond Flour
  • 1 large Egg
  • 2 teaspoons Almond Extract
  • 1 teaspoon Vanilla Extract
Topping
  • 1/4 cup Sliced Almonds
  • Powdered Sugar for dusting

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, combine 1/4 cup sugar and water; bring to a boil.
  3. Remove from heat and stir in 1/2 teaspoon almond extract.
  4. Slice the day-old croissants in half lengthwise.
  5. In a bowl, mix together softened butter, 1/2 cup sugar, almond flour, egg, 2 teaspoons almond extract, and vanilla extract until smooth.
  6. Spread the mixture inside each croissant half.
  7. Close the croissants and brush with the sugar syrup.
  8. Place croissants on a baking sheet and sprinkle with sliced almonds.
  9. Bake for 13 minutes or until golden brown.
  10. Dust with powdered sugar before serving.
