Ingredients
  

Cake Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
Mousse Filling
  • 8 ounces semisweet chocolate chopped
  • 1 cup heavy cream chilled
  • 2 large eggs separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
Topping
  • 1/2 cup heavy cream whipped
  • 1 tablespoon chocolate shavings

Method
 

Prepare the Cake Base
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, and baking powder.
  3. Add melted butter, eggs, and vanilla extract. Mix until smooth.
  4. Pour the batter into the prepared pan and bake for 30 minutes. Let cool.
Make the Mousse Filling
  1. Melt the chopped chocolate in a double boiler over simmering water. Stir until smooth.
  2. In a separate bowl, beat the egg yolks with sugar and vanilla until pale.
  3. Fold the melted chocolate into the egg yolk mixture.
  4. In another bowl, whip the heavy cream until soft peaks form. Fold into the chocolate mixture.
  5. Pour the mousse over the cooled cake base and refrigerate for at least 2 hours.
Serve the Cake
  1. Once set, remove the cake from the springform pan.
  2. Top with whipped cream and chocolate shavings before serving.
