Ingredients
  

Chicken Stir-Fry
  • 1 lb chicken breast sliced
  • 2 cups mixed vegetables fresh or frozen
  • 3 tbsp soy sauce low sodium
  • 1 tbsp olive oil for cooking
  • 1 tsp ginger grated
  • 1 clove garlic minced
Taco Night
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
Pasta Primavera
  • 8 oz pasta any type
  • 2 cups mixed vegetables zucchini, bell peppers, carrots
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 cup parmesan cheese grated

Method
 

Chicken Stir-Fry
  1. Heat olive oil in a skillet over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Add sliced chicken and cook until browned, about 5-7 minutes.
  3. Stir in mixed vegetables and soy sauce, cooking until vegetables are tender, about 5-7 minutes.
Taco Night
  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Stir in taco seasoning and water as per packet instructions. Simmer for 5 minutes.
  3. Serve in taco shells with lettuce, tomatoes, and cheese.
Pasta Primavera
  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add mixed vegetables and sauté until tender.
  3. Toss cooked pasta with vegetables, Italian seasoning, and parmesan cheese. Serve warm.
