Ingredients
  

Main Ingredients
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 8 oz tortillas corn or flour
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and salsa to the beef, stirring to combine. Cook for an additional 5 minutes.
Assembly
  1. In a baking dish, layer half of the tortillas on the bottom.
  2. Spread half of the beef mixture over the tortillas, then add half of the black beans and corn.
  3. Sprinkle with half of the cheese. Repeat the layers with the remaining ingredients.
Baking
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let cool for a few minutes before serving.
