Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 1 tbsp olive oil for drizzling
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 bell pepper red sliced
  • 1 bell pepper yellow sliced
  • 1 cup red onion sliced
Herby Ranch Dressing
  • 1 cup Greek yogurt
  • 1 tbsp dill fresh or dried
  • 1 tbsp parsley fresh or dried
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
Pitas
  • 4 pieces pita bread whole wheat or regular

Method
 

Prepare the Chicken and Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken strips, olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat.
  3. Add sliced bell peppers and red onion to the bowl and mix well.
  4. Spread the chicken and vegetable mixture evenly on a sheet pan.
Cook the Chicken and Vegetables
  1. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and vegetables are tender.
Make the Herby Ranch Dressing
  1. In a mixing bowl, whisk together Greek yogurt, dill, parsley, minced garlic, lemon juice, salt, and black pepper until smooth.
Assemble the Pitas
  1. Warm the pita bread in the oven for a few minutes.
  2. Fill each pita with the chicken and vegetable mixture, then drizzle with herby ranch dressing.
