Ingredients
  

  • 2 cups cooked rice
  • 1 pound shrimp peeled and deveined
  • 1 cup peas
  • 1 cup carrots diced
  • 1 cup green onions chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 2 large eggs beaten

Method
 

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Add shrimp and cook until pink and opaque.
  4. Stir in peas, carrots, and cooked rice.
  5. Pour soy sauce over the mixture and stir well.
  6. Push the rice mixture to one side of the skillet, pour beaten eggs into the cleared area, and scramble until cooked.
  7. Combine the scrambled eggs with the rice mixture and mix in green onions.
  8. Serve hot.
