Ingredients
  

For the Shrimp
  • 1 lb shrimp, peeled and deveined Use medium or large shrimp
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Guacamole
  • 2 ripe avocados mashed
  • 1 tbsp lime juice freshly squeezed
  • 1/4 cup red onion finely chopped
  • 1 medium tomato diced
  • 1 tbsp cilantro chopped
  • 1/2 tsp salt
For the Salsa
  • 2 medium tomatoes diced
  • 1/4 cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • 1 tbsp lime juice freshly squeezed
  • 1/4 cup cilantro chopped
  • 1/2 tsp salt
For Assembly
  • 8 small corn tostadas
  • 1 lime cut into wedges

Method
 

Prepare the Shrimp
  1. In a skillet, heat olive oil over medium heat. Add shrimp, garlic powder, cumin, paprika, salt, and pepper. Cook until shrimp are pink and opaque, about 5-7 minutes.
Make the Guacamole
  1. In a mixing bowl, combine mashed avocados, lime juice, red onion, diced tomato, cilantro, and salt. Mix until well combined.
Prepare the Salsa
  1. In another bowl, mix diced tomatoes, red onion, jalapeño, lime juice, cilantro, and salt. Stir to combine.
Assemble the Tostadas
  1. Spread a layer of guacamole on each tostada, top with cooked shrimp, and spoon fresh salsa over the top. Serve with lime wedges.
