Ingredients
  

Falafel Mixture
  • 15 ounces canned chickpeas drained and rinsed
  • 0.5 cup Old Fashioned rolled oats
  • 0.25 cup red onion roughly chopped
  • 3 cloves garlic peeled
  • 0.5 cup cilantro leaves and tender stems
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon kosher salt
  • fresh ground black pepper to taste
Toppings
  • 1 handful pickled cucumber and onions
  • 1 dollop hummus
  • 1 handful sliced or chopped tomatoes
  • 1 handful olives
  • 1 handful baby arugula
  • feta optional
  • olive oil to drizzle
  • sumac optional

Method
 

Main Instructions
  1. Preheat the oven and prepare a baking sheet.
  2. In a food processor, combine chickpeas, rolled oats, red onion, garlic, cilantro, tahini, olive oil, cumin, coriander, baking powder, kosher salt, and black pepper. Blend until the mixture is well combined but still somewhat chunky.
  3. Form the mixture into small balls or patties and place them on the prepared baking sheet.
  4. Bake the falafel in the preheated oven for approximately 25 minutes, flipping halfway through until golden and crispy.
  5. Assemble the bowls by adding baked falafel and your chosen toppings: pickled cucumber and onions, hummus, tomatoes, olives, and arugula. Drizzle with olive oil and sprinkle with sumac if desired.
