Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 2 teaspoons paprika for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable oil for frying
Sides
  • 4 servings mashed potatoes with gravy
  • 2 cups green beans steamed

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
Coat the Chicken
  1. In another bowl, place the flour. Remove chicken from marinade, allowing excess to drip off, and coat each piece in flour.
Fry the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add chicken pieces and fry for about 10-12 minutes per side, or until golden brown and internal temperature reaches 165°F.
Serve
  1. Remove chicken from skillet and place on paper towels to drain excess oil. Serve with mashed potatoes and green beans.

For extra crispy chicken, double dip the chicken in buttermilk and flour before frying.
