Prepare the Marinade
- In a bowl, combine ranch dressing, grated Parmesan cheese, minced garlic, black pepper, salt, and olive oil.
- Add the cubed chicken to the marinade and mix well. Cover and refrigerate for at least 30 minutes.
Assemble the Skewers
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and optional vegetables onto skewers.
Grill the Skewers
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Ensure the internal temperature of the chicken reaches 165°F (75°C).
Serve
- Remove from the grill and let rest for a few minutes before serving.
- Serve with extra ranch dressing for dipping if desired.
