Ingredients
  

Salad Base
  • 4 ears corn husked and cleaned
  • 1 cup blackberries fresh
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally, until charred and tender.
Make the Salad
  1. Once the corn is cool enough to handle, cut the kernels off the cob and place them in a mixing bowl.
  2. Add blackberries, cherry tomatoes, cucumber, red onion, and cilantro to the bowl.
Prepare the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 30 minutes before serving.
