Method
Prepare the Vegetables
- Preheat the grill to medium-high heat.
- Brush the zucchini slices and eggplant with olive oil and sprinkle with salt.
Grill the Vegetables
- Place the zucchini and eggplant on the grill. Grill the zucchini for about 3-4 minutes per side until tender and grill marks appear.
- Grill the eggplant for about 15-20 minutes, turning occasionally, until the skin is charred and the flesh is soft.
Make the Baba Ganoush
- Remove the grilled vegetables from the grill and let them cool slightly.
- Scoop the flesh of the eggplant into a food processor. Add the grilled zucchini, tahini, lemon juice, garlic, salt, cumin, and smoked paprika.
- Blend until smooth, adding olive oil as needed to achieve desired consistency.
Serve
- Warm the flatbreads on the grill for a minute on each side.
- Spread the baba ganoush on the flatbreads and serve immediately.
