Grilled Zucchini Flatbread Baba Ganoush

A delicious and smoky baba ganoush made with grilled zucchini and served on warm flatbread.

Ingredients
  

For the Baba Ganoush
  • 2 medium zucchini sliced lengthwise
  • 1 medium eggplant pricked with a fork
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 2 tablespoons olive oil plus more for grilling
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
For the Flatbread
  • 4 pieces flatbread store-bought or homemade

Method
 

Prepare the Vegetables
  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini slices and eggplant with olive oil and sprinkle with salt.
Grill the Vegetables
  1. Place the zucchini and eggplant on the grill. Grill the zucchini for about 3-4 minutes per side until tender and grill marks appear.
  2. Grill the eggplant for about 15-20 minutes, turning occasionally, until the skin is charred and the flesh is soft.
Make the Baba Ganoush
  1. Remove the grilled vegetables from the grill and let them cool slightly.
  2. Scoop the flesh of the eggplant into a food processor. Add the grilled zucchini, tahini, lemon juice, garlic, salt, cumin, and smoked paprika.
  3. Blend until smooth, adding olive oil as needed to achieve desired consistency.
Serve
  1. Warm the flatbreads on the grill for a minute on each side.
  2. Spread the baba ganoush on the flatbreads and serve immediately.

Notes
