Ingredients
  

For the Chicken
  • 1 lb boneless chicken thighs skinless
  • 1 cup teriyaki sauce for marinating
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ground ginger
For the Jalapeño Pineapple Salsa
  • 1 cup fresh pineapple diced
  • 1 medium jalapeño seeded and minced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 tbsp lime juice freshly squeezed
  • 1/4 tsp salt
For Assembly
  • 8 small taco shells soft or hard
  • 1 cup shredded lettuce
  • 1 cup shredded cheese optional

Method
 

Prepare the Chicken
  1. Marinate the chicken thighs in teriyaki sauce for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. Remove from grill and let rest for a few minutes before slicing.
Make the Salsa
  1. In a mixing bowl, combine diced pineapple, minced jalapeño, red onion, cilantro, lime juice, and salt.
  2. Mix well and set aside to let the flavors meld.
Assemble the Tacos
  1. Slice the grilled chicken and place it in taco shells.
  2. Top with shredded lettuce, cheese, and jalapeño pineapple salsa.
  3. Serve immediately and enjoy!
