Prepare the Chicken
- Marinate the chicken thighs in teriyaki sauce for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Remove from grill and let rest for a few minutes before slicing.
Make the Salsa
- In a mixing bowl, combine diced pineapple, minced jalapeño, red onion, cilantro, lime juice, and salt.
- Mix well and set aside to let the flavors meld.
Assemble the Tacos
- Slice the grilled chicken and place it in taco shells.
- Top with shredded lettuce, cheese, and jalapeño pineapple salsa.
- Serve immediately and enjoy!
