Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup milk whole or buttermilk
  • 1/2 cup honey
  • 1/4 cup unsalted butter melted
  • 2 large eggs

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the cornmeal, flour, baking powder, and salt.
  3. In another bowl, combine the milk, honey, melted butter, and eggs, and mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake for 15-20 minutes or until the tops are golden and a toothpick comes out clean.
  3. Let cool for a few minutes before removing from the tin.
