Preparation
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a mixing bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In another bowl, combine the milk, honey, melted butter, and eggs, and mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
Baking
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until the tops are golden and a toothpick comes out clean.
- Let cool for a few minutes before removing from the tin.
