Punch Base
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup coconut cream unsweetened
  • 1 cup pineapple juice fresh or canned
  • 1 cup white rum optional for a non-alcoholic version
  • 2 cups sparkling water or club soda
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon sugar adjust to taste
Garnish
  • 1 cup sliced strawberries for garnish
  • 1 cup pineapple chunks for garnish
  • mint leaves fresh mint for garnish

Method
 

Prepare the Punch
  1. In a large punch bowl, combine the sliced strawberries, coconut cream, pineapple juice, white rum (if using), lime juice, and sugar. Whisk until well combined.
  2. Slowly add the sparkling water to the mixture and stir gently to combine.
Serve
  1. Fill serving glasses with ice and pour the punch over the ice.
  2. Garnish each glass with additional sliced strawberries, pineapple chunks, and fresh mint leaves.

Notes

For a non-alcoholic version, simply omit the white rum. This punch can be made ahead of time; just add the sparkling water right before serving to keep it fizzy.
