Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 cup parmesan cheese grated
Vegetables
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 cup bell peppers sliced

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, salt, pepper, and Italian seasoning.
  3. Coat the chicken thighs with the seasoning mixture.
Baking
  1. Place the seasoned chicken in a baking dish.
  2. Arrange the broccoli, cherry tomatoes, and bell peppers around the chicken.
  3. Sprinkle grated parmesan cheese over the chicken and vegetables.
  4. Bake in the preheated oven for 45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove from the oven and let rest for 5 minutes before serving.
  2. Serve hot with the roasted vegetables.
