Ingredients
  

Pasta
  • 8 oz rotini pasta or any short pasta
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Meats
  • 4 oz salami sliced and chopped
  • 4 oz pepperoni sliced
  • 4 oz provolone cheese cubed
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, salami, pepperoni, and provolone cheese.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Garnish with chopped parsley before serving.
