Ingredients
  

Pasta
  • 12 oz penne pasta
Sausage
  • 1 lb Italian sausage casings removed
Vegetables
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup bell pepper chopped
  • 1 cup spinach fresh
Seasoning
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Cheese
  • 1/2 cup parmesan cheese grated

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook Sausage
  1. In a skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add Vegetables
  1. Add chopped onion, garlic, and bell pepper to the skillet. Sauté until the vegetables are softened, about 5 minutes.
Combine Ingredients
  1. Stir in the diced tomatoes, spinach, oregano, basil, red pepper flakes, salt, and black pepper. Simmer for 10 minutes.
  2. Add the cooked pasta to the skillet and toss to combine. Cook for an additional 2-3 minutes until heated through.
Serve
  1. Serve hot, garnished with grated parmesan cheese.
