  • 1 cup mushrooms sliced
  • 2 cups cherry tomatoes halved
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons olive oil

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, oregano, and basil.
  3. Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the chopped onion and garlic, sautéing until the onion is translucent.
  6. Add the sliced mushrooms and cook until they are tender.
  7. Stir in the halved cherry tomatoes and cook until they start to soften.
  8. Return the chicken to the skillet, nestling it among the vegetables.
  9. Cover and cook for an additional 5 minutes, allowing the flavors to meld.
  10. Serve hot, garnished with fresh basil if desired.
