Korean BBQ Chicken Skewers

Ingredients
  

Chicken Marinade
  • 1 pound boneless chicken thighs cut into 1-inch pieces
  • 1/4 cup soy sauce low sodium recommended
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon black pepper
  • 2 green onions sliced for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Mix well.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  2. Remove from the grill and let rest for a few minutes before serving.
Serve
  1. Garnish with sliced green onions and serve with your favorite dipping sauce.
