  • 2 medium cucumbers sliced thinly
  • 1 cup radishes thinly sliced
  • 2 green onions scallions chopped
  • 1 tablespoon sesame seeds toasted
Dressing
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochugaru Korean red pepper flakes
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 clove garlic minced

Method
 

Prepare the Vegetables
  1. Slice the cucumbers and radishes thinly and chop the green onions.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, gochugaru, sugar, sesame oil, and minced garlic.
Combine and Serve
  1. Add the sliced cucumbers, radishes, and green onions to the dressing. Toss well to combine.
  2. Sprinkle toasted sesame seeds on top before serving.
