Ingredients
  

Salad Base
  • 10 cups mixed greens such as romaine, spinach, and arugula
  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup carrots shredded
Proteins
  • 2 cups grilled chicken sliced
  • 1 cup chickpeas canned, drained and rinsed
  • 1 cup feta cheese crumbled
Dressing
  • 1/2 cup olive oil extra virgin
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and carrots.
  2. Add the grilled chicken, chickpeas, and feta cheese on top of the salad base.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  2. Transfer the salad to a serving platter and serve immediately.
