Ingredients
  

Taco Meat Base
  • 2 cups leftover taco meat
Taco Pasta Bake
  • 8 oz pasta any shape
  • 1 cup cheddar cheese shredded
  • 1 cup sour cream
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
Taco Stuffed Peppers
  • 4 large bell peppers halved and seeded
  • 1 cup black beans cooked
  • 1 cup corn canned or frozen
  • 1 cup mozzarella cheese shredded

Method
 

Taco Pasta Bake
  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente.
  3. In a mixing bowl, combine the cooked pasta, leftover taco meat, salsa, sour cream, cumin, chili powder, and half of the cheddar cheese.
  4. Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
  5. Bake for 20 minutes or until the cheese is bubbly and golden.
Taco Stuffed Peppers
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together leftover taco meat, black beans, corn, and half of the mozzarella cheese.
  3. Stuff the bell pepper halves with the mixture and place them in a baking dish.
  4. Top with the remaining mozzarella cheese.
  5. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
