Ingredients
  

Pasta
  • 2 cups elbow macaroni uncooked
Vegetables
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1/2 cup sweet pickle relish
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooled macaroni, diced celery, red bell pepper, red onion, and sweet pickle relish.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the macaroni salad and mix until everything is well coated. Adjust seasoning if necessary.
Chill and Serve
  1. Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.
